>{Taste of the Coast} Tropical Slaw

>As the weather continues to warm up I continually search for recipes that don’t require me to heat up the kitchen. This Tropical Slaw makes a wonderful “beachy” side dish and even people who don’t like slaw will love this recipe. You really can’t mess this recipe up…you can add more or less fruit and nuts as desired. The salty-sweet, crunchy mixture is a sure hit!

Ingredients:
2 bags of ready made slaw mix
1 can pineapple tidbits or chunks, drained
1 chopped, tart apple (like Granny Smith)
1-1 1/2 cups red seedless grapes (sliced into halves)
1/2-1 cup dried cranberries
1/2-1 cup salted sunflower seeds, or salted party peanuts
Slaw dressing, to taste

Directions:
Put slaw mix in a large bowl. Toss in drained pineapple, peeled (or leave peel on) chopped apple, cut grapes and dried cranberries. Slowly add slaw dressing to taste. Chill until ready to serve.
